Mushroom Spinach Pasta Bake

There is just something so comforting about a good home baked pasta dish. I have always found these to be great on a relaxing weekend as the weather starts to get cooler. The way the different smells of the pasta sauce and garlic fill the air, it gets your mouth watering. And unlike spaghetti with the sauce just poured over the cooked pasta, when you mix everything together, then bake it the flavors just meld so completely.

This recipe is really easy because you are using sauce from a jar. Cook the pasta, mix it all together and pop it in the oven to bake. The recipe specifically calls for the Ragu Homestyle think and hearty mushroom sauce, but you can use whatever sauce you have, but try it with the recommended sauce. And the fresh, melted mozzarella all gooey and toasted is just the “cherry on top”.

Prep time for this recipe is about 10 minutes, maybe a little longer, cooking the pasta and mixing everything together. Baking time is 20-25 minutes, so you are looking at about 40 minutes til everything is prepped and cooked.  While the mushroom spinach pasta bake is in the oven, you can prepare a nice mixed greens salad as a side and maybe even some garlic bread or breadsticks for a complete meal.

Ingredients:

2.5 cups whole wheat penne pasta

2 cups Ragu Homestyle Thick and Hearty Mushroom Sauce (or similar)

1 tsp garlic

2 cups mushrooms, sliced

2 cups spinach and arugula mix

4 oz fresh mozzarella

Italian seasoning to taste

 

To Prepare Your Mushroom Spinach Pasta Bake

1) Preheat Oven to 350 degrees

2) Cook the pasta according to directions. Rinse with cold water and set aside.

3) In a mixing bowl, combine the pasta, sauce, garlic, mushrooms, and spinach mix until everything is evenly coated.

4) Pour mixture into a baking dish, top with fresh mozzarella. Season to tase.

5) Bake for about 20-25 minutes.

6) Serve hot and enjoy!
