Banana Bread Energy Balls

These banana bread energy balls are an easy, healthy snack that taste just like banana bread. Make a big batch of these on the weekend and keep them on hand for throughout the week.

Whether you are rushing out the door in the morning, late for work again, or need a quick snack before heading to the gym, these are just the thing for you. Each ball has about 106 calories, 13g Carbohydrates, 3g Protein and 5g Fat, just enough that one or two will get you through to your next meal.

Ingredients for Banana Bread Energy Balls

Makes about 16 Servings

Old Fashioned Rolled Oats – 2 cups

Ripe Banana – ½ cup mashed

Almonds – ½ cup

Pecans – ½ cup

Maple Syrup – 1/3 cup

Ground Cinnamon – ¼ teaspoon

Salt – ¼ teaspoon

 

Directions for Banana Bread Energy Balls

These energy balls are as simple as can be. Plus, they’re gluten-free, and vegan. So, grab your food processor and cookie scoop, and let’s get started.

1) Add all the ingredients to a food processor and pulse the mixture for 10 seconds. Then scrape down the sides and blend again until the mixture is fairly smooth, with slight bit of texture.

2) Scoop a ball using a medium cookie scoop and roll it in between your hands. Continue this process until you’ve used up all the dough.

3) You can enjoy the balls right away or place them in a storage container. You can either leave them at room temperature for softer balls or place them in the fridge if you like them chilled and firm.

 

Notes:

If the balls are not binding together the texture may be too coarse, put the mixture back in the food processor until texture is smoother.

Store your banana bread energy balls in an air tight container in the refrigerator for up to 2 weeks. For longer storage freeze them.
