Following up on the Facebook post from earlier this week on the health benefits of watermelon, I found this recipe for Watermelon Feta Salad. After all, watermelon is the essence of summer and it’s so good for you. This recipe is from our partners at Alloy.
Watermelon Feta Salad
This is a great dish that is destined to be a hit at your next summer picnic. The sweet flavor of watermelon with savory Feta and a touch of mint will hit the spot on a hot summer day. Depending on the occasion you can make this basic by cutting the watermelon into chunks. For a fancier presentation you can ball the watermelon, then hollow out and make a bowl out of the rind with scalloped edges.
This recipe makes about 20 servings, so it is ideal for a get-together of family or friends. Only 85 Calories, per serving with 3 g protein, 16g carbs, 1 g fiber, 15g sugar and 5g fat. This will become a favorite of the summer.
Here is what you will need to prepare your Watermelon Feta Salad.
1/3 c extra virgin olive oil
3 tbsp fresh lemon juice
2 tsp Kosher salt
1 tsp tabasco
½ tsp fresh ground pepper
1 8-pound seedless watermelon, cut into chunks or scooped into balls, chilled.
½ pound or 2 cups reduced-fat feta cheese crumbled
1 ¼ cup pitted Kalamata olives, chopped
1 small sweet onion, diced to ½ inch
1 cup coarsely chopped mint (or basil)
To Prepare Your Watermelon Feta Salad
1) In a large bowl, whisk together olive oil lemon juice, salt, Tabasco, and pepper.
2) Add watermelon, feta, olives and onion, toss gently.
3) Garnish with Mint and serve chilled.
