Summer Mint Melon Salad
Nothing says summer like melons; watermelon, honeydew, and cantaloupe. This refreshing salad will quickly become a staple for your summer gatherings. We all know how important it is to stay hydrated during the hot summer days, well this salad is another way to help you, these summer melons are full of natural juices. Toss in a simple honey lime dressing and sprinkle with mint and you are ready to go.
This recipe is also really healthy. Watermelon is a rich source of Lycopene, vitamin A and carotenoids. Honeydew is loaded with fiber, potassium and vitamin A. And Cantaloupe is packed with vitamins A and C and beta-carotene.

Here is what you will need to prepare your Summer Mint Melon Salad.
4 cups watermelon, peeled and cut into chunks or use a baller
4 cups cantaloupe, peeled and cut into chunks or use a baller
4 cups honeydew melon, peeled and cut into chunks or use a baller
1/2 cup clover honey
1/4 cup fresh lime juice
1 heaping teaspoon grated lime zest
1/2 teaspoon kosher salt
2 tablespoons fresh mint, finely chopped
Note: I like to use a melon baller, I feel it makes the pieces of melon more uniform and visually appealing. Plus they are the perfect bite size.
To Prepare Your Summer Mint Melon Salad
1) Mix the honey and lime juice in a small bowl until well blended. Stir in the lime zest.
2) Add all of the cut-up melon to a large bowl and add the honey lime dressing.
3) Toss to coat the melon.
4) Place the salad onto your serving plate/platter then sprinkle the salt and mint over the top.
Total Prep Time: about 15 Minutes, Yield: 4-6 servings
