Shrimp Scampi

You have been running all day, maybe you had an office pot-luck and the day ran long. You are ready for a light, somewhat healthy alternative to the holiday fare that you have been splurging on. This recipe is quick and easy, perfect for your hectic holiday schedule.  Serve this recipe up on a bed of zucchini noodles with some steamed seasonal vegetables for a great dinner in no time. Here’s a tip to help keep the prep and cooking time down, Birdseye and Green Giant both make steamer bags with zucchini noodles and other vegetable “pastas”.

Here is what you will need to prepare your shrimp scampi


2 tablespoons butter

1 pound shrimp, peeled and deveined

½ teaspoon salt

2 garlic cloves

2 tablespoons lemon juice

2 tablespoons minced fresh parsley

To Prepare Your Shrimp Scampi

Follow these east weeknight cooking steps:

1) Heat the butter in a sauté pan over medium heat

2) Add shrimp and salt and sauté for 2 minutes. Add garlic and sauté for 1 more minute, or until shrimp are cooked through.

3) Sprinkle shrimp with the lemon juice and parsley, toss to coat.

4) Serve over pasta, alongside vegetables.
