This recipe is quick and easy, perfect for your hectic holiday schedule. Serve this recipe up on a bed of zucchini noodles with some steamed seasonal vegetables for a great dinner in no time. Here is what you will need to prepare your shrimp scampi
2 tablespoons butter
1 pound shrimp, peeled and deveined
½ teaspoon salt
2 garlic cloves
2 tablespoons lemon juice
2 tablespoons minced fresh parsley
To Prepare Your Shrimp Scampi
Follow these east weeknight cooking steps:
1) Heat the butter in a sauté pan over medium heat
2) Add shrimp and salt and sauté for 2 minutes. Add garlic and sauté for 1 more minute, or until shrimp are cooked through.
3) Sprinkle shrimp with the lemon juice and parsley, toss to coat.
4) Serve over pasta, alongside vegetables.
