Pizza Stuffed Mushrooms

Who doesn’t love pizza? I mean for most of us it has been a staple of our diet since we could eat solid food. But, now that we are getting more health aware, we know that the crust and all those bad carbs make pizza a food that we save for special occasions. Well, with this recipe we substitute Portobello mushroom caps for the pizza crust, eliminating the bad carbs and making this a keto friendly option.

The recipe below is a basic recipe, and just like any other type of pizza you can customize these pizza stuffed mushrooms with all of your favorite toppings.  If you don’t like black olives, skip them and add something you do like. Switch out the salami for turkey pepperoni or maybe some turkey sausage crumbles.

No matter how you choose to stuff your mushrooms, this is a great recipe for family night, or having friends over for a game night. Everyone can make their own their own pizza stuffed mushroom and enjoy some quality time, and some quality food.  Here is what you  will need for the basic recipe, you can add or substitute whatever you like.


5 large mushrooms , 10cm/4″ wide (portobello, flat mushrooms etc, Note 1)

2 tbsp olive oil

Salt and pepper

2/3 cup pizza sauce (I use store bought)

100g/ 3.5 oz salami slices , chopped

1/4 red onion , finely chopped

1/3 cup black olive slices

1 cup (100g) mozzarella cheese , shredded

To Prepare Your Pizza Stuffed Mushrooms

1) Preheat oven to 180C/350F.

2) Carefully break or cut the stems off the mushrooms.

3) Chop stems (will use as filling).

4) Place mushrooms cap side up. Using a small, sharp, THIN knife, cut a small cross in the mushroom, taking great care not to split the mushroom (to drain excess water, Note 2)

5) Brush the tops with oil, then quickly sprinkle on salt and pepper (be fast so it sticks!)

6) Flip then lightly dab the inside with remaining oil, sprinkle with salt and pepper.

7) Fill mushrooms with pizza sauce, sprinkle with chopped mushroom, onion, half salami and half olives.

Bake 1 – Bake 10 minutes, remove from oven.

Top with cheese, remaining salami and olives.

Bake 2 – Bake further 10 minutes until cheese is melted. Serve immediately!
