Island Pork & Sweet Potato Toss

Tart green apple and rich caramelized onions compliment sweet and salty orange and soy sauce-infused pork in this tropics-inspired recipe. This recipe makes 4 servings and can be served on it’s own or with a side of rice. Each serving provides about 290 calories and 22 grams of protein.

Here is what you will need to prepare your Island Pork & Sweet Potato Toss


1 tsp extra-virgin olive oil

1-1/2 pounds sweet onions, sliced into thin rounds

1 pound sweet potato, peeled, cut into 1/2” cubes

2 tbsp reduced sodium soy sauce

1 Orange, juiced and zested

3/4 pound pork tenderloin, trimmed and cut into 1/2” cubes

1 large Granny Smith apple, cut into 1/2″ inch cubes


To Prepare Your Island Pork & Sweet Potato Toss

1) In a large nonstick skillet, heat oil on medium. Add onions and sauté, stirring occasionally, for 20 minutes.

2) Meanwhile, fill a medium saucepan halfway with water and bring to a boil. Add potatoes and reduce heat to medium; cover and simmer for 10 minutes. Drain and set aside.

3) To skillet with onions, stir in soy sauce, orange juice and zest. Add pork and sauté, stirring occasionally until pork is cooked through.

4) To pork mixture, add apple and cook for 1 minute. Remove from heat and stir in potatoes.
