Grilled Garlic and Black Pepper Shrimp

Savory shrimp tossed in a garlic, chili, black pepper and lime marinade then grilled to a light char. I can almost taste it. I don’t know about you, but this time of year I love cooking on the grill. However, I get tired of the same old steak, chicken and burgers. I like to try different things from time to time and this recipe is super easy. It only takes a few minutes to prepare and about 5 minutes to grill, which makes it great for a busy evening during the week.

These grilled garlic and black pepper shrimp skewers pare well with a nice jasmine rice and some fresh steamed seasonal vegetables to makes a wonderful healthy meal quickly and easily.  Uncle Ben’s makes a jasmine rice that you can have ready out of the microwave in just 90 Seconds. And there are any number of steam in the bag vegetables available to make this a super easy meal to both prep and clean up.

Here is what you will need to prepare your Grilled Garlic and Black Pepper Shrimp.

Ingredients:

1 fresh red chili (such as Fresno), seeds removed, finely grated

3 garlic cloves, finely grated

1 tablespoon coarsely ground pepper

1 tablespoon fresh lime juice

2 tablespoons vegetable oil, plus more for grill

1-pound large shrimp, peeled, deveined

Kosher salt

Lime wedges and Kashmiri chili powder or paprika (for serving)

Special Equipment

Four 8-inch-long metal skewers or bamboo skewers soaked 30 minutes in water

 

To Prepare Your Grilled Garlic and Black Pepper Shrimp

1) Whisk chili, garlic, pepper, lime juice, and 2 Tbsp. oil in a large bowl. Add shrimp and toss to coat; season with salt.

2) Thread shrimp onto sets of 2 skewers.

3) Prepare a grill for medium-high heat; clean grates well, then oil.

4) Grill shrimp, turning once, until cooked through and lightly charred, about 5 minutes total.

5) Serve with lime wedges dipped in chili powder.
