Broccoli Cheddar Scramble

This is a great easy breakfast or brunch idea. As much as we all hear the breakfast is the most important meal of the day, we have to admit that many days we either skip it altogether or grab some high carb, low nutrient cereal bar or bagel on our way out the door in the morning.  This recipe only takes about 10 minutes start to finish, perfect for the morning rush.  Give this recipe a try.

Here is what you will need to prepare your Broccoli Cheddar Scramble


1 cup frozen broccoli thawed and drained. You can use fresh if you like.

2 tablespoons butter.

4 large eggs, beaten with 2 tablespoons of milk

½ cup sharp cheddar cheese, shredded

To Prepare Your Broccoli Cheddar Scramble

1) Thaw and drain broccoli, wring as much water out using a clean dry dish towel of several paper towels.

2) Melt the butter in a large non-stick pan over medium heat

3) Saute broccoli for 2-3 minutes until heated through, then pour eggs into pan and scramble.

4) Cook for about a minute, then add the shredded cheddar cheese and scramble until melted, about 1 minute.
