Chicken Divan Casserole
Chicken divan is an old favorite, this recipe steps it up and makes it a bit healthier. With a few substitutions from the original, this is a low-fat recipe. There are a couple of ways to make this recipe prep a little faster. You can use left-over rotisserie chicken or other baked chicken and you can substitute frozen broccoli florets for fresh. Chicken Divan is good served over rice.
Here is what you will need to prepare your Chicken Divan Casserole
1 1/4 pound fresh chopped broccoli, cooked
3 cups cubed cooked chicken
1 can (10-3/4 ounces) reduced-fat, reduced-sodium cream of chicken soup, undiluted
1 cup reduced-sodium chicken broth
1 cup fat-free mayonnaise
2 tablespoons lemon juice
1/2 teaspoon pepper
1/4 teaspoon garlic powder
3/4 cup shredded reduced-fat Cheddar Cheese
To Prepare Your Chicken Divan Casserole
1) Coat a 13×9 baking dish with nonstick cooking spray. Arrange broccoli in the dish, top with chicken.
2) Combine cream of chicken soup, chicken broth, mayonnaise, lemon juice, pepper and garlic; pour over chicken and broccoli. Sprinkle with cheese.
3) Cover and bake at 350 degrees for 30 minutes. Uncover; bake for 5-10 additional minutes until bubbly.
4) Serve over rice.
